Single Serve Banana Pancakes


2 eggs

1/4 cup oats

2 tbsp all purpose flour

1/2 tsp cinnamon

pinch of salt

3/4 banana (save the rest for topping!)

1/2 tsp baking soda


  1. Blend all of the ingredients in a blender.*

  2. Cook the pancakes over a greased skillet on medium heat for about 1-2 minutes (or until little bubbles start to appear in the batter). Carefully flip the pancake and cook for another 30 seconds to 1 minute. Repeat with the remainder of the batter

  3. Stack up your hotcakes and top them with the remaining banana slices, almond butter, coconut chips, cacao nibs, and a healthy shower of maple syrup. Bon appétit!

*Alternatively, you could mash all the ingredients together in a bowl, which will result in a more chunky texture.
